Hey kids, welcome to another edition of Cooking with Dad! Today I’m going to show you how to make some cookies that I always make around Christmas. They look like this—you’ve probably seen them before. They’re called Sandies, but they’re also known as Mexican Wedding Cakes, Russian Tea Cakes, or Snowballs. Lots of names, but they all mean the same thing: deliciousness rolled in powdered sugar.

I’m going to show you how I make them. It’s a pretty simple recipe and doesn’t take very long. Before we start, I’ve got a dad joke for you:

“Did you know not all websites use cookies? English websites use biscuits!”

All right, let’s get started!

Ingredients

Here’s what you’ll need (I’m doubling my recipe, so adjust accordingly):

  • 2 cups butter, softened (not melted or hot; I microwave it for 30 seconds, but times may vary).
  • 2/3 cup granulated sugar.
  • 2 teaspoons vanilla extract.
  • 4 ½ cups all-purpose flour.
  • 1 ½ cups nuts (I use 2 cups because I prefer more nuts. Chop them into small pieces but not too fine—you want a little crunch).
  • ½ teaspoon salt (optional if using salted butter).
  • Powdered sugar, for rolling (sifted if possible).

Instructions

  1. Soften the butter: Make sure it’s soft but not melted.
  2. Chop the nuts: Use a rounded knife to chop them. Don’t go too fine; you want some texture in the cookies.

Mix Ingredients:

  1. Start by creaming the butter and granulated sugar together.
  2. Add the vanilla extract. I just eyeball the amount, and a little extra vanilla never hurt anyone!
  3. Slowly add the flour in increments to avoid making a mess. Start your mixer on low speed to keep the flour from flying everywhere.
  4. Add the chopped nuts partway through mixing. Make sure all ingredients are combined, but if a bit of dry flour is left at the bottom, mix it in as you roll the dough.

Form the Cookies:

  1. Roll the dough into 1-inch balls. These cookies won’t expand much during baking, so you can place them fairly close together on a baking sheet.
  2. Preheat your oven to 375°F (190°C).

Baking:

  1. Bake for 10-12 minutes (adjust for your oven). If you’re baking multiple trays, rotate them halfway through baking. Look for the bottoms to turn a light golden brown.
  2. Let the cookies cool for a few minutes, then carefully transfer them to a wire rack.

Roll in Powdered Sugar:

  1. Roll the warm cookies in powdered sugar. This helps the sugar stick.
  2. Once they’ve cooled further, roll them again in the powdered sugar for a thicker coating. If your powdered sugar is clumpy, you can fluff it with a fork or use a sifter.

Final Tips:

  • The cookies are rich and buttery, so they might crumble a bit—that’s normal!
  • Roll them in as much or as little powdered sugar as you like. Double-coating gives them that classic snowy look.
