Hey kids! Welcome to another edition of Cooking with Dad—or more accurately, Baking with Dad!

Today, I’m going to show you how to make my mom’s Christmas cookies, which I think are the best. I used to make these for my customers and hand them out around Christmas time. They always told me they looked forward to them—maybe they were just being nice—but I got enough compliments to know these cookies are genuinely good.

They’re awesome with coffee in the morning since they’re not overly sweet. That makes them perfect to pair with coffee, cocoa, or whatever you drink. There might be a bit of nostalgia for me, but I love the taste of these cookies.

Anyway, let’s get started! This recipe is simple, and I truly believe these are the best cookies for Christmas. Let’s dive into the ingredients:


Ingredients:

  • 1½ cups margarine (softened to room temperature)
  • 1½ cups salted butter (softened)
    (If using unsalted butter, add a small pinch of salt.)
  • 8 cups all-purpose flour
  • 2 cups sugar
  • 2 teaspoons baking powder
  • 2 teaspoons vanilla extract
  • 2 large eggs

Notes on Ingredients:

You can use all butter, all margarine, or even shortening if you like, but I prefer a mix of margarine and salted butter for flavor.

For the vanilla extract, I don’t bother measuring exactly—I add a splash or two. Precision isn’t crucial for vanilla; treat the measurement as a guideline.


Equipment:

  • Electric mixer (recommended, especially if doubling the recipe)
  • Plastic wrap or cling film
  • Rolling pin
  • Cookie cutters
  • Baking sheets

Instructions:

  1. Prepare the Dough:
    • Begin by creaming the softened margarine and butter in a mixer. Start slow, gradually increasing speed to ensure they mix evenly.
  2. Add the Wet Ingredients:
    • Beat the eggs lightly and add them to the mixer. Then add the vanilla extract.
  3. Mix the Dry Ingredients:
    • In a separate bowl, combine the sugar, baking powder, and about 2 cups of flour. Mix thoroughly to avoid clumps.
  4. Combine:
    • Gradually add the dry mixture to the creamed butter and margarine. Continue mixing while gradually incorporating the remaining flour until the dough forms.

    Tip: Add flour slowly to prevent it from kicking up. Using a mixer shield or plastic cover can help minimize mess.

  5. Chill the Dough:
    • Divide the dough in half. Wrap each portion tightly in plastic wrap and refrigerate for at least 2 hours. Chilling makes the dough easier to work with during rolling and cutting.

    (You can leave the dough overnight if needed—just let it soften slightly before rolling.)


  1. Roll Out and Cut Shapes:
    • Flour your work surface lightly to prevent sticking. Roll the dough to about ¼ inch thickness.
    • Use your favorite cookie cutters. Simple shapes like stars, gingerbread figures, and Christmas trees are easiest to decorate.
  2. Bake the Cookies:
    • Preheat your oven to 375°F (190°C).
    • Arrange the cookies on a baking sheet. These cookies don’t spread much, so you can place them close together.
    • Bake for 8–10 minutes or until the edges are just starting to turn golden.
  3. Cool and Decorate:
    • Let the cookies cool completely before icing and decorating.

    (Tip: Don’t overwork the leftover dough scraps to avoid making it too stiff with excess flour.)
